Borscht – 2023

A decade of making Borsch, and every year it changes for Orthodox Christmas. It's not supposed to be complicated, but there can be a lot added to it. It's soup. There's not too much to say. I like to make it a day beforehand, so the flavours can merge. To save stove space, it's good to keep in a slow cooker.

Ingredients

  • 2 Litre Beef Broth Spend the extra dollar on better broth
  • 1 Litre Vegetable Broth Again, better quality.
  • 590 mL White Kidney Beans Large Can.
  • 820 mL Diced Tomatoes Large Can. Unico.
  • 1 tbsp Dried Dill
  • 1 tsp Garlic Powder
  • 1 tsp Dried Savoury
  • 1 cup Diced Celery
  • 1/2 tsp Black Pepper
  • 4 Bay Leaves
  • 1 tsp Seasoning Salt
  • 2 tbsp White Vinegar
  • 1 tbsp Worcestershire sauce 8 dashes
  • 1 cup Pre-cooked Bacon Keep some grease, but not too much.
  • 1 cup Browned Ground Beef
  • 1 cup Cooked Ham
  • 1 cup Roasted Red Pepper Canned. Or do it yourself.
  • 1 cup Sauteed Cabbage Savoy.
  • 1-1/2 cup Grated Carrots
  • 1 cup Roasted Chopped Onions
  • 4 cups Roasted, Grated Beets
  • 1/2 cup Boiled Potatoes Diced

Instructions

  • You can make your own broth, but if you are in a hurry, get the pre-made broth. This has a tonne of ingredients, but mostly it's assembly cooking into a big pot.
  • Roast the beets, onions, and red peppers then let them cool.
  • Once cooled, grate the beets and carrots together.
  • Just chop up everything.
  • Then put it in a big pot.
  • Big. Pot.

      I have made this for my entire life. Every winter, when lemons are in season,, we would make an enormous batch. It stores exceedingly well because it is so acidic. You can mix in the syrup to your own taste. Don’t let anyone tell you how much is too much. You know yourself.
