No-Bake Cheesecake

Emma J. used to make this for my birthday for years. Still one of my favourite desserts. I'd slowly eat the whole Pyrex in a couple days. There's not a lot to it, but it's delicious. Is it cheesecake? Kind of. It has cream cheese. It's also best topped with canned cherry pie filling.

Ingredients

Crust

  • 1-1/2 cup Graham Cracker Crumbs
  • 1/3 cup White Sugar
  • 6 tbsp Butter Melted

Filling

  • 2 8. oz. Cream Cheese Package Not from a tub.
  • 1 cup White Sugar
  • 2 tbsp Lemon Juice (or Amaretto)
  • 2 tsp Vanilla
  • 2 cups Whipping Cream
  • 1 can Cherry Pie Filling

Instructions

Crust

  • Combine graham cracker crumbs, sugar, melted butter in a mixing bowl.
  • Press mixture into the bottom of a 7"x11" Pyrex baking dish.
  • That's really about it. You should probably double the amount for a thicker crust.

Filling

  • Beat first four ingredients together. Do not let the cream cheese warm up too much.
  • Whip the whipping cream and slowly mix in with the first ingredients with a hand mixer.
  • Pour this over the graham cracker crust.
  • Top with the cherry pie filling.
  • Refrigerate overnight.
