Emma J. used to make this for my birthday for years. Still one of my favourite desserts. I'd slowly eat the whole Pyrex in a couple days. There's not a lot to it, but it's delicious. Is it cheesecake? Kind of. It has cream cheese. It's also best topped with canned cherry pie filling.

1/3cupWhite Sugar

Filling
28. oz. Cream Cheese PackageNot from a tub.
1cupWhite Sugar
2tbspLemon Juice (or Amaretto)
2tspVanilla
2cupsWhipping Cream
1canCherry Pie Filling
Instructions
Crust
Combine graham cracker crumbs, sugar, melted butter in a mixing bowl.
Press mixture into the bottom of a 7"x11" Pyrex baking dish.
That's really about it. You should probably double the amount for a thicker crust.
Filling
Beat first four ingredients together. Do not let the cream cheese warm up too much.
Whip the whipping cream and slowly mix in with the first ingredients with a hand mixer.
