Buttercream Frosting

Print Recipe
I always use this for Birthday Cakes. It holds a good from, and takes colouring really well. It is a lot of butter, so don’t go too crazy, otherwise you’ll get bathroom issues. C. just eats the icing, and tries to give the cupcake to whoever is closest.

Ingredients

  • 1/2 Cup Unsalted butter (room temperature)
  • 1-1/2 Tsp Vanilla Extract
  • 2 Cups Icing sugar
  • 3 Tbsp Milk
  • 3 Drops Food Colouring

Instructions

  • Don’t microwave your butter. Let it warm up an hour on the counter. Otherwise it gets a weird film on your icing.
  • Cream room temperature butter with a hand mixer until smooth and fluffy. Use a mixer. Seriously. If you have time to hand stir this, then you have time to find a mixer.
  • Gradually beat in icing sugar until fully incorporated. Then add the vanilla extract.
  • Pour in milk and beat for an additional 3 to 4 minutes.
  • Add food colouring, and beat for thirty seconds until smooth.

It’s a solid icing to use on cookies. It’s slightly glossy and looks great. I hate using raw eggs, because of salmonella possibilities, but egg replacers work just as well.

  • Lemonade

I have made this for my entire life. Every winter, when lemons are in season,, we would make an enormous batch. It stores exceedingly well because it is so acidic. You can mix in the syrup to your own taste. Don’t let anyone tell you how much is too much. You know yourself.

This was the favourite recipe I made for Stoki back in 2020. I had doubled the recipe and it was gone in moments. I should have quadrupled this recipe.

Just a chop and mix. Since every vegetable is a different size, I used weight instead of measures for the most part.

It's meat in a puff pastry. It's not complicated, and not truly slavic. But everyone, including kids, seems to really like them.
