I always use this for Birthday Cakes. It holds a good from, and takes colouring really well. It is a lot of butter, so don’t go too crazy, otherwise you’ll get bathroom issues. C. just eats the icing, and tries to give the cupcake to whoever is closest.
Ingredients
1/2CupUnsalted butter (room temperature)
1-1/2TspVanilla Extract
2CupsIcing sugar
3TbspMilk
3DropsFood Colouring
Instructions
Don’t microwave your butter. Let it warm up an hour on the counter. Otherwise it gets a weird film on your icing.
Cream room temperature butter with a hand mixer until smooth and fluffy. Use a mixer. Seriously. If you have time to hand stir this, then you have time to find a mixer.
Gradually beat in icing sugar until fully incorporated. Then add the vanilla extract.
Pour in milk and beat for an additional 3 to 4 minutes.
Add food colouring, and beat for thirty seconds until smooth.
